Pumpkin Pie Chia Pudding

We just can’t get enough pumpkin this fall, especially whisked up in this incredibly Pumpkin Pie Chia Pudding! For those of you who love chia pudding, rejoice, because the addition of pumpkin makes it just that much creamier.

This recipe was created of Melissa, a registered dietician and the brains behind the blog So Much Yum Blog. She admittedly has a very “finicky” gastrointestinal system, which is why she loves food like chia, fiber-packed pumpkin, and our Organic Digest.

If you’re looking for simple, healthy breakfast ideas that feed a healthy gut, then you’ve found the ideal recipe! Here’s how to make it:

2 Tbsp chia seeds
1/2 Tbsp The Natural Citizen Organic Digest
1/4 tsp pumpkin pie spice
1/4 cup canned pumpkin puree
1 cup non-dairy milk
1/2 tsp pure vanilla extract
1 tsp pure maple syrup

Whisk it all together and then pour into a mason jar and seal it. Refrigerate overnight or at least four hours, then it’s ready to eat.
